Just saw this and I can't wait to try it... Typically I don't post a recipe on here until I have tried it... But I love Danielle Walker, Against All Grain.

American Breakfast Bake

INGREDIENTS

SCALE
  • 12 slices nitrate and sugar-free bacon
  • 2 pounds potatoes (Hannah sweet, yukon or red), scrubbed clean, unpeeled
  • 1 tablespoon melted ghee or avocado oil
  • 2 teaspoons everything bagel seasoning
  • 1 1/4 teaspoons sea salt
  • 1/2 teaspoon fresh cracked pepper
  • 6 large eggs
  • 2 tablespoons chopped fresh chives

INSTRUCTIONS

  1. Line a full sheet pan with parchment paper or a SilPat. Place bacon in a single layer onto the prepared pan. Turn oven on to 425F and immediately place the pan in the oven on the center rack. Bake for 8 to 10 minutes, until bacon is mostly cooked but still soft, and fat has rendered on the pan. Remove the bacon to a plate lined with towels, leaving the grease on the pan.
  2. Grate the potatoes with a cheese grater, using the grating attachment on a food processor, or using a spiralizer. Pour off all but 2 tablespoons of the bacon grease from the tray. Add the potatoes to the tray of bacon grease. Drizzle the ghee over top and sprinkle with 1 1/2 teaspoon of the bagel seasoning, 1 teaspoon sea salt, and 1/4 teaspoon pepper.
  3. Place the tray back into oven on the top rack, and bake until the edges begin to brown, about 15-17 minutes.
  4. Remove from oven and toss the potatoes. Pack back into a single layer, then create 6 wells in the hash browns. Add the semi-cooked bacon slices and eggs, gently cracking the eggs throughout and keeping the yolk intact. Sprinkle eggs with the remaining bagel seasoning, salt and pepper.
  5. Place back into oven on the top rack and bake until the egg whites have set but the yolks are still runny and the potatoes have crisped on the top, an additional 2 to 4 minutes. Garnish with chives and serve immediately.

Trim the pork tenderloin of any excess fat and silver skin.
Place the lime zest, lime juice, honey, salt, and garlic powder in a small, lidded jar and shake to combine. Pour half of the marinade mixture into a 1-gallon resealable bag, add the chipotle pepper, and move around to combine. Add the pork tenderloin to the bag and seal, removing as much air as possible and place in a container to catch any leaks. Marinate in the refrigerator for 6 to 24 hours, rotating the bag halfway through the time. Place the remaining marinade in a covered container and refrigerate until ready to use.
Remove the tenderloin from the bag and allow to sit at room temperature while preparing the grill. Remove the reserved marinade from the refrigerator.
Fill a large chimney starter with natural lump charcoal and light. Once the charcoal is ashy and white, approximately 30 minutes, dump the hot charcoal onto the lowest grate of the grill and spread into an even layer using extra-long tongs. Place the cooking grate back on the grill and cover with the lid; heat the grate to medium heat for 2 to 3 minutes.
Brush the grill with vegetable oil. Remove the tenderloin from the bag and place in the center of grate. Discard bag with marinade. Cover and cook for 12 to 15 minutes, turning every 1 1/2 to 2 minutes, until the tenderloin reaches an internal temperature of 140 degrees F.
Remove the tenderloin from the grill and place on a large piece of heavy-duty aluminum foil folded at the edges to create a basket, and pour on the reserved marinade. Wrap tightly and rest for 10 minutes. Remove to a cutting board and slice. Garnish with cilantro and serve.

 

BEST DAMN INSTANT POT PULLED (My creation from 2 recipes together)

  •  DESCRIPTION

    The most amazing, tender, juicy and delicious Instant Pot pulled pork recipe.


    INGREDIENTS

    • 7lb Pork Butt Roast, boneless or bone-in
    • 4 tablespoons brown sugar

      2 tablespoon hot paprika 

      2 tablespoon kosher salt 

      4 teaspoons garlic powder 

      2 teaspoon ground cumin 

      2 teaspoon dried oregano 

      2 teaspoon ground black pepper 

    • Dry mustard


    INSTRUCTIONS

    1. Trim fat from pork roast and cut into 4 same size chunks.
    2. Add all dry ingredients to a large bowl and whisk together. Add pork roast chunks to rub mix and coat well.
    3. Add 2 tbs olive oil to Instant Pot and set to saute. Once it indicates hot, add 2 pieces of the pork. Sear on each side for about 2 minutes each. Remove pork and set aside on a plate. Repeat with remaining pork pieces.
    4. Once pork is seared and removed from pot, press cancel and add 1/2 cup chicken broth. Use a wooden spoon and deglaze the bottom of the pot. Make sure to scrape up all the bits. Then add remaining chicken broth. Worcestershire sauce and liquid smoke.
    5. Place pork chunks directly into the liquid in the pot, spacing out as best possible. Secure lid and make sure vent is set to sealing. Pressure cook/manual on high pressure for 60 minutes.Then let pressure release naturally for 20 minutes or until pin drops.
    6. Remove pork to a large bowl and shred with 2 forks. Add your favorite BBQ sauce as desired. Or use the juice from the Instant Pot – it’s loaded with awesome flavor!

    Kickin' Grilled Chicken Legs - Simplicity is Perfection

    Ingredients

    • 4 chicken legs drumsticks with thighs attached
    • 1 tsp kosher salt plus more to taste
    • 1 Tbsp dark soy sauce
    • 1 Tbsp olive oil
    • 1/2 tsp black pepper
    • 1/2 tsp granulated garlic
    • 1 tsp granulated onions
    • 1/2 tsp cayenne pepper plus more for a stronger kick - see my notes

    Instructions

    1. Start preheating the grill to medium high, about 300F-350F at the grate level.
    2. Meanwhile, combine all of the spices and the salt in a medium size bowl and mix well.
    3. Pat dry the chicken legs with paper towel, then evenly apply the rub all over the chicken legs. The rub should stick to the chicken fairly easily without adding any oil. If not, rub the chicken legs with a small amount of oil then apply the rub. Set aside and let sit at room temperature until the grill is ready.
    4. Brush the grill grate with a little bit of oil to prevent chicken legs from sticking. Place the legs on the grill, skin side down, and close the lid. Grill covered for about 30 minutes, flipping every 8-10 minutes and moving around to account for hot spots and ensure even browning. The legs are ready when the chicken legs are nicely browned and the internal temperature is reading about 180F-190F.

    Recipe Notes

    1/2 tsp of cayenne pepper will provide mild, pleasant spiciness
    1 tsp - medium kick
    1 1/2 tsp plus more - a lot of kick.

    Eating to prevent cancer - my version

    So as you know last week I met with an Integrative Oncologist. So many of the things I am already doing right concerning food. One can always do better though - right? So here I go and I will share a bit of my journey with you.

    I was told to drink up to 32 oz of green day a day. Some of my favorites so far are Tazo, Organic peachy green and Equal Exchange, Jasmine Green - I love both of them and have been drinking 16 or 32 oz per day.

    My nutritionist has told me in the past to take your body weight divide the number in half then drink that many ounces of water each day. I have been putting that amount in a pitcher each day and by the end of the day it needs to be empty.  I have been using that water in  my green tea too - didn't know that I was ready to do the additional liquid.

    I was also told to eat 2 tablespoons of flax seed meal every day - I have used the organic flax seed meal  for years in my baking - but I wasn't sure how to get 2T into my diet daily. Today I tried Trader Joe's Organic Whole Milk Yogurt. I spooned some of it into a bowl - added the flax seed meal - added some homemade vanilla then some organic blueberries and strawberries. Tried it - YECK! It was sour so back to the drawing board I went. I then added some maple syrup and mashed some of the fruit so some of the juices would be going throughout the yogurt. Pretty tasty! That I can eat!

    I have also been adding more vegetables to all  of our meals. We already eat quite a few, but I have even been adding them to breakfast. Sauteed onions, kale, bacon (no nitrites/nitrates) put into a bowl served with a fried egg on top - YUM! Last week I also made us an omelette with sauteed onions, asparagus, goat cheese  and smoked salmon. With this option I was able to add in some extra fish. This was another goal of mine after meeting with the IO. With this omelette I succeeded with two of my goals and it was yummy!

    I have also added tumeric twice a day to my nutritionals. This is supposed to help prevent cancer and to help with inflammation so Alex has also joined me in taking it. I also take the LLV supplements from doTERRA which have been amazing and I swear by! I have more energy then since before Evan was born. Alex, the boys and I also take daily supplements of Vitamin D - this is believed to help prevent MS.

    Working out is another big goal - I should be receiving a call anytime now from a trainer at the YMCA - they offer a 12 week course for survivors. I know with the five abdominal surgeries I have had I definitely need to work on my core!

    So there you have it - just a few things I have started doing to  make sure I am doing all I can to ve healthy and remain cancer free - can't leave Alex alone with these three boys!

    I have fought and won against breast cancer so what next! I met with an Integrative Oncologist this week - I LOVED her. She has studied with and worked with Dr. Weil. We are doing pretty well with food already - I am just going to try and make a few adjustments - more green tea (up to 32/day), more fish... She ran some testing on my blood for Thyroid, Vitamin B, Vitamin D and . They called me the following day and told me it was PERFECT! She had wanted me to stop taking my doTERRA LLV (a multi-vitamin), but after seeing my results they told me to keep doing whatever it was I was doing! Love the LLV! The next big challenge with her treatment plan is to start an exercise program - I am going to do the one offered through the YMCA for cancer survivors - I believe it is a 12 week program.

    Alex's appointment this week didn't go as well. He has been working so very hard on what he is eating - he has cut out all grains & most sugar since December. His cholesterol numbers did not go down - so very frustrating. Our nutritionist said she has only had one other patient in 15 years that that has happened to. He has now started statins which concerns me. There can be memory issues - on top of the MS, that is definitely a concern. It can also cause or contribute to Diabetes and his sugar numbers are already pre-diabetic. I am going to make sure he does better with his nutritionals and he also needs to start working out again. He is researching bikes - so a tri or a marathon training is what I think he wants to do.

    The boys are as wonderful, challenging, beautiful, sweet, driving me out of my mind as ever! I love that they love to play together - I love how creative they are, I love that they love to hear reading (either from one of us or from books on CD), I love how amazingly sweet they can all  be with others, how considerate they can be. Two of our biggest challenges are sitting through dinner and getting ready for bed - prayers that those will both get better in the near future! ;o) Avery is super excited to start Kindergarten in the fall and ride the bus with Evan. I know Owen is going to have a hard time with both of his brothers in school full-time. Owen will be attending school five half days and I believe he will have speech three days a week this year - so we will be busy too!

    We finally got a countertop and backsplash in the spring - LOVE them. Our next goal - flooring in the family room/kitchen by the end of August. I continue to work on de-cluttering our home - NEVER ending! Progress is being made - but never enough quick enough.

    The boys can earn and/or lose tickets depending on their behavior, helping out, misbehaving... Yesterday as Evan was unloading the dishwasher he  asked me why I was making them be our servants! Seriously? So I informed him if he really wanted to be my servant he could start washing our clothes, folding them, (they do now put away their own clothing), grocery shopping, cooking, cleaning... he decided he didn't want to do all of that.

    I am drinking my organic green tea as I type this - yay me!

    We have been to the mountains this summer - Avery managed to run down a hill into an old fence and cracked open his head. In lieu of watching fireworks at Crossnore we spent 4th of July in the ER and waited for them to glue his head closed. The boys, Alex & Bodaddy all went to the caverns and falls there and had a great time! We also got to see Erin, David & Ellie twice - once for dinner at the Linville house and once out.

    We went to Richmond for Aunt Nancy's wedding (it is always strange to say, think, type Aunt Nancy - as I always think of my amazing Great-Aunt Nancy). The boys and I loved meeting our cousins - Alex loved meeting the next generation and we all loved meeting Bill's family (our new joined family). We got to have dinner at Aunt Nancy's with everyone. Saturday we went to the Science Museum of Virginia after we went out to breakfast. We then went to the lovely wedding reception lunch, back to the museum then on to Uncle Monty's for pizza with everyone. We were sad to have to leave. The boys now want to visit their cousins in Montana.

    We got back from Ohio on Sunday. We had a great time there. Mom and I organized and went through everything in the upstairs storage room. Alex found her sewing machine from the 60's and was super excited as he has been researching them and it is perfect for his hammock making he has been enjoying. I even managed to find some of the additional attachments in the storage room. Now if I could just get our home as organized as that room! All of us, including mom went to COSI for a day followed by a trip to Jeni's Ice Cream - YUM! We got to have dinner/breakfast with aunts/uncles/cousins which we all loved. We got to go swimming and have lunch with cousins followed by making chocolate chip cookies with Mackenzie. Then she let Avery & Owen walk her cows and feed them candy - they loved it. They also played on the swing set that has been there longer than I have been alive - Owen showed us some of his gymnastics moves on the rings. We also got to enjoy Benny's pizza with more aunts/uncles/cousins! The boys so love seeing family - I love it!

    Yesterday the boys and I made Chai banana muffins - yum! We still have many things to accomplish from our summer to-do list. Avery, Owen and I have been to Discovery Place, but Evan hasn't made it yet. We have been to the pool - but need to continue to learn to swim better. Avery slept with Alex in the tent while we were in Ohio. We have read and listened to books. Avery has learned to ride his new Trek bike - but can still use some practice. We have been to the mountain house, Ohio, Plaza and farm. We have made & eaten ice cream. I don't think we have yet worked on snapping. We have built Lego (Evan & Avery are currently working on building Evan's Sea Cow). I don't think we have watched the "Lego Movie" yet - it is on the big screen in the next week or two though. We have been to the movies, blown bubbles, worked on school books, played video games, watched TV, played outside, taken walks, planted a garden, made s'mores, played with friends & blown bubbles to list a few things. Oh and we need to do some science experiments/kits yet too - eeks! Summer is flying by! Some days too quickly and some days I just have to ask if it is August 24th YET?!? HA!

    I think I have typed & sipped on green tea as long I can possibly allow for today - until next time! Ciao my friends!
